Vegetable Fritters



Ingredients

  • 1 ½ lbs of your choice of vegetables or greens (I chose carrot, leek & potatoes)

  • ½ cup Chickpea Flour

  • ⅛ cup Water

  • 1 tablespoon Fresh Chopped Herbs (I used carrot tops)

  • ½ Cup Parmesan (or Vegan Parm)

  • ½ tsp salt

  • ½ tsp pepper

  • 3 Cloves Garlic

  • ¼ cup oil to fry

  • Sour cream to garnish

Preparation

  1. Shred your vegetables with a mandolin or julienne.

  2. Combine vegetables, chickpea flour, water, herbs, cheese, salt, pepper, garlic & herbs. Mix together. Gradually add water and mix (I mixed by hand to distribute ingredients well)

  3. Scoop by the tablespoon and flatten into patties by hand.

  4. Heat the oil in a shallow frying pan on medium high

  5. Fry until golden brown on each side (about 3-4 minutes each side)

  6. Serve with sour cream or topping of your choice.

Tips

  • For vegan, use vegan parmesan cheese & vegan sour cream

  • If using carrots with the tops, use the tops as one of your herbs! It’s very much like parsley!

  • This recipe is easily gluten free, grain free & vegan

  • If mix is too dry still, add more water by the tablespoon
