Ingredients
1 ½ lbs of your choice of vegetables or greens (I chose carrot, leek & potatoes)
½ cup Chickpea Flour
⅛ cup Water
1 tablespoon Fresh Chopped Herbs (I used carrot tops)
½ Cup Parmesan (or Vegan Parm)
½ tsp salt
½ tsp pepper
3 Cloves Garlic
¼ cup oil to fry
Sour cream to garnish
Preparation
Shred your vegetables with a mandolin or julienne.
Combine vegetables, chickpea flour, water, herbs, cheese, salt, pepper, garlic & herbs. Mix together. Gradually add water and mix (I mixed by hand to distribute ingredients well)
Scoop by the tablespoon and flatten into patties by hand.
Heat the oil in a shallow frying pan on medium high
Fry until golden brown on each side (about 3-4 minutes each side)
Serve with sour cream or topping of your choice.
Tips
For vegan, use vegan parmesan cheese & vegan sour cream
If using carrots with the tops, use the tops as one of your herbs! It’s very much like parsley!
This recipe is easily gluten free, grain free & vegan
If mix is too dry still, add more water by the tablespoon
